Grouper Ala(bama) Ted

Or, Chicken Ala(bama) Ted

1 egg

1 cup milk

1/2 pack saltine crackers, crushed

1 tbsp dry Italian seasoning

1 cup olive oil

Grouper filets (boneless, skinless chicken breast, pounded flat) or your favorite white fish

Fresh Angel Hair Pasta

1/2 stick butter

1/4 cup olive oil

1 tsp dried parsley

3 cloves garlic, minced

Beat the egg in one cup of milk to make the egg wash.  Combine crackers and Italian seasoning.  Heat 1cup olive oil to medium in a skillet. Place filets in egg wash and then coat with cracker mixture. Lightly brown on each side about 3-5 minutes. Serve on a bed of angel hair pasta that is tossed with the sauce below.

Sauce for Pasta –  Heat 1/4 cup olive oil to medium and add butter. When the butter melts add the garlic and parsley. Heat for one minute and toss with angel hair pasta.
